  • 1 lb ground chicken (or ground pork)
  • 1 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 1 head butter or romaine lettuce (leaves separated for cups)
  • 1/2 English cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh mint, chopped
  • 3 green onions, sliced
  • 1/4 cup roasted peanuts, chopped
  • 3 tbsp sweet chili sauce (plus more for drizzling)
  • 1-2 tsp sriracha (to taste)
  • 1 tbsp sesame seeds
  • 1 tbsp neutral oil for the pan
  • Salt to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add onion and bell pepper; sauté 3-4 minutes until softened.
  2. Add ground chicken, breaking it apart. Cook 6-8 minutes until no longer pink.
  3. Stir in sweet chili sauce and sriracha; cook another 1-2 minutes to coat. Taste and season with salt.
  4. Remove from heat. Stir in half the green onions and half the cilantro.
  5. Arrange lettuce cups on a platter. Spoon chicken mixture into each cup.
  6. Top with diced cucumber, peanuts, sesame seeds, remaining green onion, mint, and cilantro. Drizzle with extra sweet chili sauce and sriracha as desired.
