Chicken Lettuce Wraps

- 1 lb ground chicken (or ground pork)
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 1 head butter or romaine lettuce (leaves separated for cups)
- 1/2 English cucumber, diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh mint, chopped
- 3 green onions, sliced
- 1/4 cup roasted peanuts, chopped
- 3 tbsp sweet chili sauce (plus more for drizzling)
- 1-2 tsp sriracha (to taste)
- 1 tbsp sesame seeds
- 1 tbsp neutral oil for the pan
- Salt to taste
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and bell pepper; sauté 3-4 minutes until softened.
- Add ground chicken, breaking it apart. Cook 6-8 minutes until no longer pink.
- Stir in sweet chili sauce and sriracha; cook another 1-2 minutes to coat. Taste and season with salt.
- Remove from heat. Stir in half the green onions and half the cilantro.
- Arrange lettuce cups on a platter. Spoon chicken mixture into each cup.
- Top with diced cucumber, peanuts, sesame seeds, remaining green onion, mint, and cilantro. Drizzle with extra sweet chili sauce and sriracha as desired.
Notes
- Quantities estimated — adjust to taste.
- Swap peanuts for cashews if preferred.
- Great for meal prep: store filling separately from lettuce and toppings.
